About this place
With their clean, square-cut edges and remarkably smooth glide, the noodles at Mametetsu in Shinjuku's Shinogawamachi neighbourhood leave an immediate impression. The shop prepares Sanuki-style udon that strikes a satisfying balance between gentle chew and effortless slurp, paired with deeply aromatic dashi. Cold preparations put the noodle's firm elasticity on full display, while hot bowls feature a clear, restorative broth that warms without feeling heavy.
The daytime favourite is the Herb Sangenton Pork Dashi Shabu Udon, topped with thin slices of quality pork quickly poached in the house broth. Tender and free of any gaminess, the pork absorbs the savoury dashi cleanly. For a heartier meal, the affordable Lunch Set pairs hot or cold udon with a bowl of daily changing seasoned rice.
For tempura lovers, the Kashiwa-ten Udon is an essential order, topped with seasoned chicken breast fried to a crisp, light crunch. The exterior stays airy and aromatic while the poultry inside remains moist and substantial. Diners can also opt for generous combinations like the Trio, which loads the bowl with pork dashi shabu, chikuwa fish cake tempura, burdock root tempura, wakame seaweed, and crisp tenkasu tempura flakes.
Seasonal bowls featuring tart sudachi citrus and Kagawa soy sauce showcase the unadorned flavour of the wheat, complemented by toppings like soft-set onsen eggs or sticky grated Yamato yam. In the evening, the counter offers a relaxed setting to sip sake while waiting for a freshly boiled bowl, fitting everything from a casual solo meal to an unhurried dinner.
